This delectable Riverview Farms Pork Jowl is dry-cured with black pepper, chilis, and garlic and then carefully stored in our curing cave to age for 2 months. Guanciale lends marvelous flavor to classic Italian pasta dishes, such as Carbonara and Bucatini all'Amatriciana, or can be used to flavor fresh spring peas or crisped to serve with a simple arugula salad.
